I posted this picture of my crock pot chili on Facebook, and friends asked for the recipe, so here it is!

About 1 lb top sirloin steak – cubed
1 poblano pepper – seeded and diced (or two jalapeno peppers)
1 red pepper – seeded and diced
1 green pepper – seeded and diced
1 yellow pepper – seeded and diced
1 large red onion – chopped
4 cloves garlic – minced
1 can pinto beans – drained and rinsed
1 can kidney beans – drained and rinsed
1 can black beans – drained and rinsed
2 cans crushed tomatoes
Salt & Pepper to taste
Tex Mex spice blend (You can make your own – see recipe below this one) or buy a pre-mixed
About a tbsp oil
S&P to taste
Beef demi-glace or concentrated stock (Bovril) if desired

Monterey Jack Cheese -cubed
Tortilla chips
Cilantro – chopped

Heat oil at med-high
Add garlic, onions & peppers, season with S&P and sautee until softened
Add tex mex spice mix
Add steak, and cook until browned, stirring regularly. Make sure to scrape up fond from bottom of pan as you do.
Add beans + tomatoes
Bring to a lazy boil
Transfer to crock pot
Cook on low for 6 hours or on high for 3.

Add cubed cheese to bowls (five or six cubes should do)
Ladle chili into the bowl
Top with tortilla chips and cilantro

Voila! Enjoy. :)
